The present invention relates to a method for producing bamboo salt containing saponin. According to the present invention, the method for producing bamboo salt includes the steps of: (a) putting bamboo into an inner bottle formed therein with at least one hole, and putting the inner bottle having the bamboo into an outer bottle (b) putting salt in a space between the outer bottle and the inner bottle from the step (a) (c) sealing the outer bottle in the step (b) with a cover (d) producing the bamboo salt by putting the outer bottle sealed in the step (c) into a kiln and heating the outer bottle and (e) pulverizing the bamboo slat from the step (d). According the method of the present invention, the bamboo salt hardly includes heavy metal, and includes ginseng, red ginseng, and black ginseng powders to provide a superior flavor.
