PROBLEM TO BE SOLVED: To provide a water-oil-water multiple emulsion system characterized in that water molecules in an inner phase of the system is stabilized by modifying the water molecules hydrophobically in the inner phase by a hydrogen bond inhibiting agent and enhancing the cohesive force between the water molecules by a water molecule cohering agent.SOLUTION: The water-oil-water multiple emulsion system comprises a step of making water hydrophobic by mixing the hydrogen bond inhibiting agent and the water molecule cohering agent, a step of mixing the hydrophobically modified water phase and a hydrophobic surfactant homogeneously, a step of obtaining the stabilized water-oil emulsion by the mechanical shearing force, a step of re-emulsifying the water-oil emulsion system by a hydrophilic surfactant and a step of stabilizing the water-oil-water multiple emulsion system by enhancing the viscosity of the outer water phase by a dispersion stabilizer.COPYRIGHT: (C)2002,JPO【課題】 水素結合抑制剤によって内相の水分子を疎水化し、水分子凝集剤によって水分子間の凝集力を向上することにより、内相の水分子が動水力学的に安定化することを特徴とする水-油-水多重エマルジョンシステム及びその製造方法を提供する。【解決手段】 水素結合抑制剤及び水分子凝集剤を混合して水を疎水させる段階と、上記疎水化された水相及び疎水性界面活性剤を均一に混合し、機械的剪断力によって安定化した水-油エマルジョンを収得する段階と、上記水-油エマルジョンを親水性界面活性剤で再乳化する段階と、分散安定剤で外水相の粘度を高めることにより、上記水-油-水多重エマルジョンシステムをより安定化させる段階とを含む。
