The present invention relates to a method for culturing ginseng sprouts using acer mono sap and plum extract, which enables a harvesting of crops with rich nutrients since ginseng sprouts contain a large amount of effective ingredients of acer mono sap and plum extract while increasing a growth speed of crops by using mixture solution of acer mono sap and plum extract which are local products of Gwangyang city in culturing ginseng sprouts. The present invention comprises: a step a) of preparing acer mono plum extract by mixing acer mono sap with plum juice extracted by separating flesh of plum, and putting the mixture in a concentrator to concentrate； a step b) of forming culture soil by mixing the acer mono plum extract of the step a), water, and microorganism mixed with bacillus subtilis and photosynthetic bacteria in gardening soil； a step c) of fermenting the culture soil of the step b)； a step d) of transplanting ginseng seedlings in the fermented culture soil of the step c)； a step e) of performing germination in a germination chamber so that sprouts are able to grow from ginseng seedlings transplanted in the culture soil of the step d)； a step f) of culturing the sprouts germinated in the germination chamber in the step e) for more than two weeks by irradiating light for 6-10 hours a day in a cultivation room which maintains a constant temperature； and a step g) of shipping the ginseng sprouts cultured in the step f).본 발명은 광양시의 특산물인 고로쇠 수액과 매실엑기스 혼합액을 새싹삼 재배하는데 이용하여 작물의 성장속도를 높임과 동시에 고로쇠 수액과 매실엑기스의 유용성분이 새싹삼에 다량 함유되어 영양이 풍부한 작물을 수확할 수 있도록 하는 고로쇠 수액과 매실엑기스를 이용한 새싹삼 재배방법에 관한 것으로, 그 구성은, a) 고로쇠 수액과, 매실의 과육을 분리하여 착즙한 매실착즙액을 혼합하여 농축기에 넣고 농축하여 고로쇠 매실엑기스를 준비하는 단계； b) 원예용 상토에 상기 a)단계의 고로쇠 매실엑기스, 물, 고초균과 광합성균으로 혼합된 미생물을 배합하여 배양토를 형성하는 단계； c) 상기 b)단계의 배양토를 발효시키는 단계； d) 상기 c)단계의 발효된 배양토에 묘삼을 이식하는 단계； e) 상기 d)단계의 배양토에 이식된 묘삼에서 새싹이 생장하도록 발아실에서 발아시키는 단계； f) 상기 e)단계의 발아실에서 발아된 새싹을 항온을 유지하는 재배실에서 하루 중 6 - 10시간 빛을 조사하면서 2주 이상 재배하는 단계； 및 g) 상기 f)단계의 재배된 새싹삼을 출하시키는 단계를 포함하여 이루어
