The present invention relates to a Sparassis crispa mycelium cultivation method using a cereal culture medium. The cultivation method includes culture medium preparation and cultivation steps. The culture medium preparation step includes: a step of producing fermented hay by putting hay into a fermenter and fermenting the hay for three to five days in aerobic conditions a step of producing a liquid extract by putting the fermented hay into a double boiling machine, adding water, and performing heating and a step of producing the cereal culture medium by dipping cereal in the liquid extract. In the dipping step, pH is maintained at 6.5 to 7.5.
