FIELD: food industry.SUBSTANCE: invention relates to the food industry and can be used in the production of pasty food products in the form of sunflower paste. Method for preparing the confectionery paste is proposed, which involves calibrating sunflower seeds, then roasting them at the temperature of at least 155 °C for at least 8 minutes, after which their cooling to the temperature of 30–35 °C for at least 5 minutes, which is followed by grinding them to a uniform consistency – sunflower paste, which is pumped into the mixer at constant stirring, then the heating is carried out up to the temperature of 60 °C and which involves the addition of the following ingredients – high oleic sunflower oil, skimmed milk powder, powdered sugar with the particle size of up to 100 mcm, vanillin, then the introduction of the mixed ingredients into the conching machine, where they are conched for 5 hours at the temperature of 50–55 °C, and the mixture of mono- and triglycerides is added 60 minutes before the end of conching, while the components of the confectionery paste are selected with the following ratio of the ingredients, wt%: sunflower mass 55.78–72.37; high-oleic sunflower oil 9.05–13.95; skimmed milk powder 3.62–9.30; mixture of mono- and triglycerides 0.45–2.32; powdered sugar 13.57–18.59; vanillin 0.06–0.94.EFFECT: invention is directed to the creation of a method for preparing a confectionery paste that provides for an increase in the organoleptic properties, food and biological value of the product with a decrease in the amount of carbohydrates; while the finished confectionery paste is packed in plastic polypropylene cups, which are sealed with a lid of aluminum foil, which allows to significantly increase the shelf life of the product.1 cl, 4 tbl, 3 exИзобретение относится к пищевой промышленности и может быть использовано при производстве пастообразных продуктов питания в виде подсолнечной пасты.
