PROBLEM TO BE SOLVED: To provide edible oil and fat having moderate flavor and body taste while being light, and suitable for heating cooking.SOLUTION: Edible oil and fat contains 0.1-50 mass% oil and fat A and 50-99.9 mass% oil and fat B. The oil and fat A is rapeseed oil subjected to deodorization treatment and having a Y+10R value of 20 or more in a Lovibond colorimeter. The oil and fat B is animal or vegetable oil and fat having a Y+10R value of less than 20 in the Lovibond colorimeter. It is preferable that the deodorizing temperature of deodorization treatment of the oil and fat A is lower than 200°C and that the oil and fat B contains at least 20 mass% of palm-based oil and fat.
