A method of preparing a chewing gum composition comprising: mixing in the molten state 30 to 90 percent by weight of a polyvinyl acetate, 5 to 20 percent by weight of a fatty acid salt, and 5 to 50 percent by weight of a food grade acid to form an encapsulated food grade acid; where all the percentages by weight are with respect to the total weight of the encapsulated food grade acid; and blending a gum base, a sweetener, and encapsulated food grade acid to form a chewing gum composition; wherein the polyvinyl acetate has a weight average molecular weight of at least 30,000 units of atomic mass; wherein the fatty acid salt is selected from the group consisting of a sodium salt of a C12-C36 aliphatic carboxylic acid, a potassium salt of a C12-C36 aliphatic carboxylic acid, a calcium salt of a C12-C36 aliphatic carboxylic acid , a zinc salt of a C12-C36 aliphatic carboxylic acid, a magnesium salt of a C12-C36 aliphatic carboxylic acid, an aluminum salt of a C12-C36 aliphatic carboxylic acid, and combinations thereof; and wherein the food grade acid is selected from the group consisting of adipic acid, ascorbic acid, aspartic acid, benzoic acid, citric acid, fumaric acid, glutamic acid, maleic acid, malic acid, oxalic acid, phosphoric acid, sorbic acid , succinic acid, tartaric acid, and mixtures thereof.Un método de preparación de una composición de goma de mascar que comprende: mezclar en estado fundido de 30 a 90 por ciento en peso de un poli(acetato de vinilo), de 5 a 20 por ciento en peso de una sal de ácido graso, y de 5 a 50 por ciento en peso de un ácido de calidad alimentaria para formar un ácido de calidad alimentaria encapsulado; en donde todos los porcentajes en peso son con respecto al peso total del ácido de calidad alimentaria encapsulado; y mezclar en estado fundido una base de goma, un edulcorante, y el ácido de calidad alimentaria encapsulado para formar una composición de goma de mascar; en donde el poli(acetato de vinilo) tiene un peso molecular pro
