1. A method of obtaining a chewing gum composition, comprising: melt mixing from about 30 to about 90 weight percent poly (vinyl acetate), from about 5 to about 20 weight percent fatty acid salt and from about 5 to about 50 weight percent food acid, to obtain an encapsulated food acid; where all weight percentages are based on the total weight of the encapsulated food acid; melt mixing of a chewing base, sweetener and encapsulated food acid to obtain a chewing gum composition. 2. The method according to claim 1, wherein the poly (vinyl acetate) has an average molecular weight of at least 30,000 atomic mass units. The method according to claim 1, wherein the fatty acid salt is selected from the group consisting of sodium salt of C-Saliphatic carboxylic acid, potassium salt of C-Saliphatic carboxylic acid, calcium salt of C-Saliphatic carboxylic acid, zinc salt of C-Saliphatic carboxylic acid, magnesium salts of C-Saliphatic carboxylic acid, aluminum salt of C-Saliphatic carboxylic acid, and combinations thereof. 4. A method according to any one of claims 1 to 3, wherein the fatty acid salt comprises sodium stearate. The method according to any one of claims 1 to 3, wherein the fatty acid salt is selected from the group consisting of adipic acid, ascorbic acid, aspartic acid, benzoic acid, citric acid, fumaric acid, gluconic acid, maleic acid, malic acid, oxalic acid , phosphoric acid, sorbic acid, succinic acid, tartaric acid and mixtures thereof. 6.
