A compound coating has a very high level of dietary fiber from about 35% toabout 75% by weight, and a particlesize of about 35 microns or less. The compound coating is formed by mixing afat portion and the dietary fiber, and then micro-grindingthe compound coating to the fine particle size. The compound coating caninclude soluble fiber, insoluble fiber, or combinationsthereof, such as polydextrose and short chain fructo-oligosaccharides. Thecompound coating can be applied to a widevariety of food forms including wafers, cereals, crackers, and other foods.The compound coating can be applied by spraying thecoating onto the food form or pumping the coating through depositing spindlesand onto the food form.
