PURPOSE: A producing method of pepper salt is provided to offer the color and the spicy taste of red pepper to the salt, and to maintain the color and the taste for a long time. CONSTITUTION: A producing method of pepper salt comprises the following steps: naturally drying bay salt, and heating for more than 8hours at 120~140deg C; crushing the heated bay salt; mixing 100parts of bay salt by weight, 3~4parts of onion extract by weight, 1~2parts of oak tree extract, and 1part of red pepper extract, for 10~20minutes; rapidly freezing the mixture at -40~-50deg C; freeze-drying the mixture at the vacuum condition; and heating the freeze-dried mixture at 15~30deg C, and drying for 8hours.
