PROBLEM TO BE SOLVED: To provide a manufacturing method of a composition for selenium compound-containing food high in selenium content compared to conventional manufacturing method and having fish meat as a raw material, and the composition for selenium compound-containing food high in selenium content.SOLUTION: There are provided [1] a manufacturing method of a composition for selenium compound-containing food including a process 1 for inactivating protein catabolic enzyme obtained by fish meat to obtain a fish meat-derived composition containing a selenium compound, a process 2 for applying the fish meat-derived composition to an enzyme reaction by adding a protein lytic enzyme derived from bacteria (enzyme 1) and a protein lytic enzyme derived from microorganism (enzyme 2) and then inactivating the enzyme 1 and the enzyme 2 to obtain the composition for selenium compound-containing food containing the selenium compound, the fish meat is mackerel, and [2] the composition for selenium compound-containing food having composition of amino acid which is an amino acid composition derived from mackerel and content of the selenium compound in the composition for selenium compound-containing food of 3 μgSe/g or more and 5 μg/g or less.SELECTED DRAWING: None【課題】従来の製造方法に比べてセレン含有量が高い、魚肉を原材料とするセレン化合物含有食品用組成物の製造方法及びセレン含有量が高いセレン化合物含有食品用組成物を提供する。【解決手段】本発明は、〔1〕魚肉が有する蛋白質分解酵素を失活させてセレン化合物を含む魚肉由来組成物を得る工程1と、魚肉由来組成物に、細菌由来の蛋白質分解酵素(酵素1)及び微生物由来の蛋白質分解酵素(酵素2)を順次加えて魚肉由来組成物を酵素反応に供した後に、酵素1及び2を失活させて、セレン化合物を含むセレン化合物含有食品用組成物得る工程2とを含み、魚肉がサバ類であるセレン化合物含有食品用組成物の製造方法、及び、〔2〕アミノ酸の組成がサバ類由来のアミノ酸組成であり、セレン化合物含有食品用組成物中、セレン化合物の含有量が3μgSe/g以上であり、総セレン含有量が5μg/g以上である、セレン化合物含有食品用組成物である。【選択図】なし
