Methods for producing foods having germinated-seed activity, germinated seeds enriched with selenium, or germinated seeds enriched with trace elements. The method uses biotechnology for seed germination activation, enrichment with selenium, or enrichment with trace elements. Seed germination stimulates enzymes and organelles to break down substances such as protein, starch, and fat, partially converting same into free amino acids, soluble sugars, fatty acids, vitamins or other active substances, thus killing off enzymes and stabilizing active ingredients, thereby greatly improving the nutritional value and therapeutic functions of common foods. Much of the grains, oils, beans and nuts we consume are foods containing dormant seeds and therefore provide for poor digestion. Once seeds are germinated and enriched with selenium, the organic selenium content thereof is 0.05 to 5 mg/kg. Using food products as a source for organic selenium supplementation is safe and effective, and can also prevent over 40 diseases, such as cancer, cardiovascular diseases, and diabetes.
