The present invention relates to meat replacement product to be used in mixed minced meat products, process for its preparation, and meat products comprising same, whereby the meat replacement product comprises the gluten protein and the bran fractions of whole cereal grain, preferably wheat. To the gluten-bran fraction the blood hemoglobin fraction can be added as well as a milk protein in form of a cheese foam. The meat replacer can replace up to 50 % of the meat.
