The present invention relates to various uses of a matured component extract containing chitin/chitosan, obtained by effectively extracting useful components contained in a crab shell, such as chitin or chitosan and maturing the useful components for a long time in food processing fields, cultivation of eco-friendly organic food materials, cosmetic materials, etc. As a mean for solving the above problem, the present invention is to manufacture a matured component extract containing chitin/chitosan by obtaining yellow soil water using red clay and barley stones, putting the yellow soil water and crab shells in an appropriate portion in a pressure cooker and boiling so as to extract chitin and chitosan contained in the crab shells, putting the component extract into a sealed container, and maturing for 6 months or more.본 발명은 게껍질에 함유된 성분, 즉 키틴이나 키토산과 같은 유용성분을 효과적으로 추출한 다음 장기간 숙성하여 키틴 및 키토산이 함유된 성분숙성추출물을 얻고, 상기 성분숙성추출물을 식품가공분야나 친환경 유기농 식자재 재배, 화장품소재 등 다양한 용도로 사용할 수 있게 한 것이다.상기 과제를 해결하기 위한 수단으로서, 본 발명은 황토와 맥반석을 이용하여 지장수를 얻고, 상기 지장수와 게껍질을 적절한 비율로 압력솥에 넣고 끓여 게껍질에 함유된 키틴 및 키토산 성분이 추출되게 하고, 상기 성분추출물을 밀폐용기에 넣고 6개월이상 숙성시켜 키틴 및 키토산 성분이 함유된 성분숙성추출물을 제조하는 것이다.
