The present invention relates to a manufacturing method of yeast and health food using yeast. Disclosed are the manufacturing method of yeast by naturally fermenting polished rice and the health food using yeast gained thereby. In order to remove impurities on the surfaces of grains containing starchiness, the grains are washed, the washed grains are dipped in water to add moisture thereto, and the water is dehydrated while maintaining the moisture of the grains at a certain ratio. The method comprises: a first fermentation step of grinding the dehydrated grains, putting the same in a fermentation tank, and fermenting the same while letting the internal temperature of the fermentation tank be 38 to 42°；C； and a second fermentation step of cooling the temperature of the grains to not let a spore be formed in the grains which are being fermented, fermenting the same again for greater than or equal to a certain period, increasing the internal temperature of the fermentation tank at 35°；C, and fermenting to let a hypha be developed. In addition, by mixing yeast, rice cooked hard, water, and bay salt at a ratio of 1 : 5 : 7 : 2, the health food is manufactured.누룩의 제조방법 및 누룩을 이용한 건강식품에 관한 것으로서, 도정한 쌀을 자연 발효시켜 누룩을 제조하는 방법과 이렇게 얻어진 누룩을 이용하여 얻어지는 건강식품이 개시된다.전분질을 함유하는 곡물류의 표면상의 이물질을 제거하기 위하여 곡물류를 세척하고, 세척된 곡물류를 물에 침지시켜서 수분을 첨가시킨 후에, 곡물류의 수분을 소정 비율로 유지하면서 물을 탈수한다. 탈수된 곡물류를 분쇄하여, 이를 발효조에 넣어서 분쇄된 곡물류를 발효조의 내부온도가 38∼42℃ 가 되도록 발효하는 제 1 발효단계하고, 발효 중인 상기 곡물류에서 포자가 형성되지 않도록 곡물류의 온도를 낮추어 냉각하고, 다시 소정 시간 이상을 발효시켜 발효조의 내부 온도를 35℃가 되도록 상승시켜 균사체가 발달할 수 있도록 발효시키는 제 2 발효단계를 통하여 누룩을 제조할 수 있다. 또한, 이러한 누룩에 고두밥, 물, 천일염을 1:5:7:2 의 비율로 혼화하여 건강식품을 제조한다.
