The present invention relates to a method for manufacturing fermented salt and the fermented salt manufactured thereby. The method for manufacturing fermented salt comprises: a step for mixing plants and sugar and fermenting the mixture to prepare a first liquid enzyme and enzyme sludge, then separating the first liquid enzyme from the enzyme sludge; a step for piling the enzyme sludge onto the salt and placing the enzyme sludge on the salt at room temperature; and a step for mixing the salt with a second liquid enzyme and fermenting the salt at room temperature, thereby manufacturing the salt which is lower in salinity and sweetness and richer in mineral content compared to the existing salt.본 발명은 발효소금의 제조방법 및 이에 의해 제조된 발효소금에 관한 것으로 식물과 설탕을 혼합하여 발효한 후 형성된 제1 액상효소와 효소슬러지를 분리하는 단계, 소금 상면에 효소 슬러지를 적층하여 실온에서 방치하는 단계 및 방치된 소금과 제2 액상효소를 혼합하여 실온에서 소금을 발효시키는 단계를 포함함으로써, 종래 소금에 비하여 염도가 적고 단맛이 나며 미네랄 함량이 풍부하다.
