The invention relates to the technical field of food and especially relates to a functional health beverage and a preparation method thereof. The functional health beverage is prepared from the following raw materials in parts by weight: 25-30 parts of lotus root extract solution, 10-13 parts of germinated corn germ extract solution, 10-15 parts of germinated mung-bean germ extract solution, 12-15 parts of germinated wheat germ extract solution, 12-15 parts of 10-13 parts of germinated oat germ extract solution, 15-18 parts of 10-13 parts of germinated red-rice germ extract solution, 0.01 part of Aspartame, 0.01 part of stevioside, 0.03 part of A-K sugar, 0.05 part of citric acid, 0.02 part of sodium citrate and 0.02 part of potassium sorbate. The functional health beverage prepared according to the preparation method disclosed by the invention is enriched in various active substances with special physiological functions. The germination and extract methods utilized in the preparation method increase contents of the functional ingredients in the extract solutions to the maximum. Moreover, the functional health beverage is refreshing in flavor, good in taste and easy to absorb.
