PROBLEM TO BE SOLVED: To provide an antioxidant comprising a fermented extract as an active ingredient obtained by symbiotic fermentation with a lactic acid bacterium and yeast, and to provide an antioxidant beverage.SOLUTION: The antioxidant comprises a fermented extract as an active ingredient obtained by symbiotic fermentation of a polysaccharide, a vegetable or fruit and a marine alga with a lactic acid bacterium and yeast. The polysaccharide is rice, rice bran and/or brown rice, and the vegetable or fruit is papaya. The raw materials are fermented with the lactic acid bacterium and the yeast for six months and the fermented extract after removal of the cells contains melanoidin. The fermented extract has antioxidative potency, and a beverage containing the fermented extract becomes an antioxidant beverage.
