FIELD: food industry.SUBSTANCE: invention relates to food industry and can be used in production of potato-sweet sausage. Batat and potatoes are washed, boiled until cooked, peeled and wiped in a mash, then cooled to 25 °C. Onions and garlic are peeled off, milled to a puree state. Prepared pork is cut into pieces and ground, adjika sauce and starch are added and all the prepared ingredients are mixed, salt, red pepper ground, turmeric is added and the mixture is again stirred, placed in a heat-resistant polymer shell. Sausages are boiled in boiling water for 20 minutes and fried in boiling oil for 15–20 minutes. Quantitative ratio of the ingredients was chosen.EFFECT: provides a product with high nutritional value due to the content of inulin in it, simplification and shortening of the technological process.1 cl
