PROBLEM TO BE SOLVED: To manufacture food and drink containing stock of dried fish, the whole flavor of which is reinforced to improve palatability, in simple operation and at a low cost.SOLUTION: A composition for reinforcing the flavor of food and drink containing dried fish includes: dried fish a subcritical water treated material obtained by treatment for 1-120 minutes in an environment contacting with water put in the subcritical state under high temperature and high pressure condition such as a temperature of 130-230°C and a pressure of 0.26-12.5 MPa to stock lees of dried fish or a by-product generated in manufacturing fish and shellfish processed foods and a water soluble solvent extract of the treated material concerned.
