PROBLEM TO BE SOLVED: To provide a cooling method of steam cooked grain and a steam cooked grain cooling device, for accommodating steam cooked grain in a vacuum container, evaporating moisture of the steam cooked grain by reducing pressure in the vacuum container and cooling steamed rice by the evaporative latent heat, a cooling method and a cooling device having smaller size, simple and excellent handleability.SOLUTION: There are provided a steam cooked grain cooling method by accommodating grain after steam cooking in a vacuum chamber, reducing pressure in the vacuum chamber by a vacuum pump and evaporating moisture contained in the steam cooked grain to make moisture content suitable for brewing and fermentation and quickly reducing temperature of steamed rice by the evaporation heat, and a steam cooked grain cooling device used therefor, a condenser for cooling and condensing steam evaporized from the steam cooked grain and aspirated by the vacuum pup has a condenser for passing and condensing steam aspirated by the vacuum pump through an ice board by freezing water in a plurality of trays having a pipe circulating a coolant at a bottom part and a cooled tray bottom outer wall surface.SELECTED DRAWING: Figure 1
