The invention relates to a method for manufacturing lightweight snacks with a crunchy texture, dehydrated portions for obtaining said lightweight snack and the lightweight snack obtained. Said invention proposes mixing a starch-free gelatinous coagulating product with thermoreversible coagulation properties that can melt at a threshold temperature with at least one flavoring product, inducing coagulation of the gelatinous coagulating product and shaping portions of said coagulated product that is less than 4 mm thick, drying said portions by means of treated air at a temperature lower than the threshold temperature, provided by a treatment unit for treating by means of treated air, obtaining dehydrated portions and frying the dehydrated portions, obtaining a lightweight snack with a crunchy texture.La présente invention concerne un procédé de fabrication den-cas légers présentant une texture croustillante, des parties déshydratées pour obtenir ledit en-cas léger, et len-cas léger obtenu. Ladite invention consiste également à mélanger un produit coagulant gélatineux sans amidon ayant des propriétés de coagulation thermoréversibles qui peut fondre à une température seuil avec au moins un produit aromatisant, à induire la coagulation du produit coagulant gélatineux et à mettre en forme des parties dudit produit coagulé faisant moins de 4 mm dépaisseur, à sécher lesdites parties au moyen dair traité à une température inférieure à la température seuil, fournie par une unité de traitement pour traiter au moyen dair traité, à obtenir des parties déshydratées et à frire les parties déshydratées, à obtenir un en-cas léger présentant une texture croustillante.
