The present invention relates to a composition containing droplets in a continuous phase comprising (a) an aqueous phase comprising water and: (i) a first polysaccharide selected from linear polysaccharides； (ii) a second polysaccharide selected from branched polysaccharides； (iii) a third polysaccharide selected from branched polysaccharides, where the third polysaccharide is different from the second polysaccharide； and (iv) at least one metal salt； and (b) a fatty phase comprising at least one oil.
