The present invention relates to a manufacturing method of a lotus leaf rice roll using a lotus leaf and a processing method of a lotus leaf for a lotus leaf rice roll. In addition, stuffing materials of the lotus leaf rice roll can be selected to customize the lotus leaf rice roll according to a life cycle of a consumer. Therefore, the lotus leaf rice roll can satisfy tastes of people of all ages.본 발명은 연잎을 이용한 연잎롤 제조방법 및 연잎롤용 연잎 가공방법에 관한 것으로, 보다 구체적으로 김 대신 연잎을 이용한 연잎롤은 각종 기능성 성분이 들어 있지만 질겨서 식용이 어려운 연잎을 차별화된 방법으로 가공한 후 연잎을 직접 섭취할 수 있도록 연잎롤 형태로 제조하여 편의점 식사 대용식, 휴대용 간편식, 또는 웰빙 간편식 등에 유용하게 이용될 수 있고, 또한, 연잎롤의 속재료에 따라 생애주기별 맞춤형으로 연잎롤을 제조하여 다양한 연령층의 기호에 부합될 수 있다.
