PROBLEM TO BE SOLVED: To provide a method for producing an edible plant extract which has the strong sweetness and deliciousness of an edible plant such as a vegetable or fruit but scarcely or never has the smell of the plant. SOLUTION: This method for producing the extract is characterized by comprising squeezing a non-heated edible plant, applying a heating treatment to the obtained juice to produce aggregates in the juice, and then removing the aggregates from the juice.
