PROBLEM TO BE SOLVED: To provide sugar-free candy enhanced in coffee flavor and allowing to enjoy real coffee flavor at a low cost.
SOLUTION: The sugar-free hard candy enhanced in coffee flavor is obtained by heating and concentrating at 140-200°C candy dough containing coffee raw bean extracted essence extracted in ethanol aqueous solution of &ge10% (v/v) concentration, and a coffee extract after roasting. The candy dough may contain further specific amino acid.
