The present invention provides a method for preparing aglycoside of a flavonoid compound, which comprises the step oftreating flavonoid and a glycosyl donor with an enzymaticagent having glycosylation activity and being derived from thegenus Trichoderma (preferably Trichoderma viride orTrichoderma reesei). Such a flavonoid compound includes acatechin compound or a methylated derivative thereof, and theglycosyl donor includes a carbohydrate containing amaltotriose residue (preferably maltotriose, maltotetraose,maltopentaose, maltohexaose, maltoheptaose, dextrin,.gamma.-cyclodextrin or soluble starch). Glycosides obtained by thepresent invention have higher water solubility, improved taste,and increased stability. The present invention also providesnovel glycosides of catechin compounds, which are obtained bythe method of the present invention.
