The present invention relates to novel process parameters and ingredients concentration for preparation of fruit honey from Indian gooseberry (phyllanthus emblica), The present invention describes a novel combination of Indian gooseberry (phyllanthus emblica) and synthetic honey which is useful to compensating the acidity and astringency. ln.this invention.we have used so many different ingredients like fructose, maltose for optimizing-the.process. In this invention the changes in temperature, change in physical and chemical properties of Indian gooseberry (phyllanthus emblica) and honey we have changed and optimized the best method for getting better yield. This invention also optimized the process for synthetic honey which is having less pH,bettef gravity, better density and better viscosity than marketed preparation i.e. Dabur honey (marketed preparation) So at last invention can prove that-this process for preparing fruit honey from Indian gooseberry (phyllanthus emblica) is better for society.
