Disclosed is a process for producing freeze dried avocado cuts utilizing a debittering step using chilled brine and/or vinegar aqueous solutions as pretreatments prior to the process of sublimation. The soaking solution is employed to address the natural bitter taste of avocado caused by the oxylipin compounds of the fruit. The resulting debittered freeze dried product is shelfstable, light in weight, easy to use, healthy and nutritious.
