PROBLEM TO BE SOLVED: To provide a manufacturing method of a processed meat food having a soft texture, which is easy to eat for elderly having weak chewing force, even with a high content of meat material.SOLUTION: The manufacturing method includes a step of containing semi-heated meat produced by heating raw material meat until just before solidification. The semi-heated meat is thinly sliced and contained in a casing so as to be formed into a predetermined shape, which is further heated so that a processed meat food can be manufactured. Alternatively, the semi-heated meat may be contained in fragmented meat salted in advance and then thinly sliced, so that a processed meat food having a soft and smooth texture can be manufactured with a further improved taste.COPYRIGHT: (C)2015,JPO&INPIT【課題】 食肉素材が多く含まれても、かむ力の弱い高齢者でも食べやすいような、ソフトな食感となる食肉加工食品の製造方法を提供する。【解決手段】 原料肉を固形化する直前まで加熱処理してできる半加熱肉を含有させる工程を経ることで、上記課題を解決できることを見出した。当該半加熱肉を細切し、ケーシングに含有させることで一定の形状となるよう形を整え、さらに加熱することで本発明の食肉加工食品を製造することができるが、当該半加熱肉をあらかじめ塩漬された細片肉に含有させ、細切処理することで、ソフトで滑らかな食感で、しかも呈味性も一層向上した食肉加工食品を製造することができる。【選択図】なし
