PROBLEM TO BE SOLVED: To provide an organic-matter preservation device and an organic-matter preservation system with improved preservation performance. SOLUTION: This organic-matter preservation device 100 includes a cooling device. The cooling device includes a hollow dry ice box 20 having air permeability, and an introducing section for introducing pressurized liquid carbon dioxide into the dry ice box. The organic-matter preservation device 100 also includes a filter 12 through which the liquid carbon dioxide passes.The filter 12 is treated by bringing activated mineral water obtained by bringing water pressurized to 5-30 atmospheres into contact with and pass through predetermined inorganic substance, into contact therewith under a pressure of 2-30 atmosphere.
