PROBLEM TO BE SOLVED: To provide low-salt liquid seasoning having salty taste of a similar level relative to that of normal liquid seasoning, in spite of its being low-salt liquid seasoning in which the salt content is made lower than normal.SOLUTION: Water insoluble substance of a melting point of 25 to 85°C is molten, and the molten water insoluble substance is mixed with salt to obtain a mixture. The obtained mixture is cooled and solidified, and is thereafter crushed to prepare salt coated with the water insoluble substance. The salt coated with the water insoluble substance is added and dispersed into low-salt liquid seasoning in a ratio of 1.0 to 10.0 w/v% as an equivalent amount of sodium chloride with respect to the low-salt liquid seasoning.COPYRIGHT: (C)2014,JPO&INPIT【課題】通常よりも食塩含有量を低減した液体調味料でありながら、通常の液体調味料と同程度に塩味を感じられる減塩液体調味料を得ることを課題とする。【解決手段】融点が25~85℃の水不溶性物質を融解させて、融解させた水不溶性物質と食塩を混合して混合物を得る。得られた混合物を冷却し凝固させた後に破砕して、水不溶性物質で被覆した食塩を調製し、該水不溶性物質で被覆した食塩を減塩液体調味料に対する食塩相当量として1.0~10.0w/v%の割合で減塩液体調味料に添加分散させる。【選択図】図1
