PROBLEM TO BE SOLVED: To provide a persimmon fermentation composition having a new function by processing simply a persimmon fruit and to provide a processing method of a persimmon fruit.SOLUTION: There is provided a heat-treated persimmon fermentation composition containing a processed product obtained by subjecting a persimmon fruit to a fermentation treatment using Aspergillus oryzae as an active ingredient.
