The method comprises: (a) selecting and cleaning raw material; (b) peeling by soaking in aqueous alkali and rinsing and juicing; (c) enzymolysis; (d) adjusting sugar content and acidity; (e) alcohol fermentation; (f) acetic acid fermentation; (g) aging; (h) blending and filtering; and (i) sterilizing and bottling. The preparation method of the invention is simple and stable together with low preparation costs and high preparation efficiency. The Jiuqian plum fruit vinegar beverage as prepared is good in taste, rich in aromas, soft and mellow in taste and high in nutrient contents, thereby promoting the development of Jiuqian plum industry. 13
