PROBLEM TO BE SOLVED: To utilize an extracted liquid of Alpinia speciosa fruit for various kinds of beverage and foods, a feed or perfume, flavor, or the like. SOLUTION: This Alpinia speciosa extracted liquid is used in production of various foods, e.g. Chinese noodles, buckwheat noodles, soybean curd, bread, ham and sausage because of an antimicrobial property of the extracted liquid in order to increase their shelf lives. The extracted liquid can effectively be utilized also for liquors, beverages, feeds, or the like. Further, the extracted liquid can be applied also for perfume or flavor.
