Food composition based on a pickle in the form of grains having a diameter of specified range, comprises preserving agent such as edible vegetable oil, and salt, spices and/or flavoring preparations such as citrus agents
Food composition based on pickle in the form of grains having a diameter of 0.5-4 (preferably 1-3) mm, comprises a preserving agent. The preserving agent is edible vegetable oil having an amount of 2-15 (preferably 4-6) wt.%. Independent claims are included for: (1) use of edible vegetable oil in the food composition based on pickle for improving stability of organoleptic properties of the food composition; and (2) preparing the food composition based on pickle in the form of grains with highly stable organoleptic properties, comprising (a) providing the pickle, (b) cutting the pickle to obtain grains having the diameter of 0.5-4 (preferably 1-3) mm, (c) removing the greater part of aqueous phase by sieving and then draining to obtain semolina grains, and (d) adding the edible vegetable oil in the semolina grains and then homogeneously mixing.Préparation alimentaire granulaire à base d'au moins un cornichon sous la forme de grains d'un diamètre compris entre 0,5 mm et 4 mm, et de préférence entre 1 mm et 3 mm, incluant en outre un agent améliorant la conservation des propriétés organoleptiques de ladite préparation, caractérisée en ce que cet agent est de l'huile végétale alimentaire entrant dans ladite préparation à raison de 2 à 15 % massiques de la masse totale de ladite préparation, de préférence à raison de 3 à 7 % massiques, et encore plus préférentiellement à raison de 4 à 6 % massiques.
