PROBLEM TO BE SOLVED: To provide a method for manufacturing a citrus fruit juice containing extremely large amount of functional components or aromatic components normally contained in a citrus fruit skin or citrus fruit juice lees in a fruit juice, or the like.SOLUTION: A citrus fruit juice rich in functional components and/or aromatic components contained in citrus fruit skin or citrus fruit lees in a large amount can be obtained by manufacturing the same by squeezing after removing fruit skin from citrus fruits to obtain a fruit juice and adding a subcritical water extract obtained by a subcritical water extraction treatment of citrus fruit skin and/or citrus fruit juice lees under a condition of a temperature of 110 to 200°C and pressure of 2 to 30 MPa to the fruit juice.SELECTED DRAWING: NoneCOPYRIGHT: (C)2018,JPO&INPIT【課題】通常は柑橘果皮や柑橘果汁搾汁粕に多く含まれる機能性成分や芳香成分を果汁中に極めて多く含む柑橘果汁を製造する方法等を提供する。【解決手段】柑橘果実から果皮を除去した後に搾汁して果汁を得て、該果汁に、柑橘果皮及び/又は柑橘果汁搾汁粕を温度110~200℃、圧力2~30MPaの条件で亜臨界水抽出処理して得られた亜臨界水抽出物を添加して製造することで、柑橘果皮や柑橘果汁搾汁粕に多く含まれる機能性成分及び/又は芳香成分がリッチな柑橘果汁を得ることができる。【選択図】なし
