PROBLEM TO BE SOLVED: To provide a culture method of a lactic acid bacterium giving a high viable cell ratio compared to a method using a liquid medium, and a food material obtained by this culture method.SOLUTION: Using a medium comprising skim-milk and wheat flour, a lactic acid bacterium is cultured. More specifically, a medium comprising skim-milk and wheat flour is inoculated with a lactic acid bacterium, the water content of the medium after inoculation with the lactic acid bacterium is adjusted to less than 65%, and the lactic acid bacterium is cultured in an optimum growth temperature range for 12 hours or more.
