The dried Smilax china L stems, Smilax china L fruits, and Smilax china L leaves are mixed with 6 kg of white sugar and 4 kg of brown sugar in a jar, and the jar is sealed for 2-3 months for fermenting. The pine needles with 1 kg of white sugar, and the mulberry leaves with 3 kg of white sugar and 2 kg of brown sugar are fermented for 2-3 months, separately in a jar. Residues are filtered with a sieve from the produced product, and the obtained extract is stored in a jar, and aged for 1 month after sealing.본 발명은 청미래덩굴 발효소스의 제조방법에 관한 것으로, 청미래덩굴 줄기 1Kg을 잘게 썰어 세척한 후 그늘에서 건조하고, 청미래덩굴 잎 0.5Kg, 청미래덩굴 열매 0.3Kg, 솔잎 0.3Kg, 뽕잎 0.8Kg을 세척하여 그늘에서 건조시키는 건조단계와, 상기 건조단계에서 건조된 청미래덩굴 줄기, 잎, 열매를 혼합하고, 백설탕 6Kg, 황설탕 4Kg을 섞어 항아리에 밀봉하여 2 ~ 3개월간 발효시키고, 상기 솔잎에 백설탕 1Kg을 섞고 항아리에 밀봉하여 2 ~ 3개월간 발효하며, 상기 뽕잎에 백설탕 3Kg, 황설탕 2Kg을 섞고 항아리에 밀봉하여 2 ~ 3개월간 각각 발효시키는 발효단계와, 상기 발효단계에서 발효된 재료를 모두 혼합하고, 물엿 5Kg, 올리고당 18Kg, 물 4Kg에 넣은 후, 50 ~ 80℃의 불에 올려 끓이면서 10 ~ 30분간 끓이고 식히는 준비단계와, 상기 준비단계에서 제조된 재료에서 찌꺼기를 채에 걸러 추출액만 항아리에 담아 밀봉한 후, 1달간 숙성시키는 숙성단계로 이루어진다.본 발명은 청미래덩굴에 솔잎과 뽕잎을 혼합하여 그 추출액을 추출한 후, 숙성시켜 그 추출액으로 만든 발효소스를 다양한 음식과 혼합하여 섭취하거나 차로 음용함으로써, 청미래덩굴 및 솔잎, 뽕잎에서 발휘하는 효과를 극대화시켜 청미래덩굴을 섭취하는 사람들에게 건강증진에 큰 효과를 제공할 수 있는 장점이 있다.
