An aqueous dispersion of microcapsules, which comprise: at least one hydrophobic substance ia. interface layer around at least one hydrophobic substance, wherein the interfacial layer comprises: i. protein aggregates and ii. negatively charged polymer with the charge distribution in the block molekule.2. Aqueous dispersion according to Claim. 1, wherein said protein aggregates comprise denatured globular protein selected from the group consisting of denatured whey protein, denatured egg white protein, denatured soy protein, denatured protein lupine, denatured rice protein, denatured pea protein, denatured wheat protein and any kombinatsii.4. Aqueous dispersion according to Claim. 1, wherein the at least one hydrophobic material is selected from the group consisting of lipids, water insoluble vitamins, water-insoluble sterols, flavonoids are insoluble in water, flavors, essential oils, and any kombinatsiy.5.
