PROBLEM TO BE SOLVED: To provide a foamable oil-in-water emulsified oil and fat composition that contains yolk, is superior in emulsion stability even with a good custard flavor, and also has a superior mouth melting, body feeling and body taste which are required when whipped.SOLUTION: The foamable oil-in-water emulsified oil and fat composition homogeneously contains each of the flowing components: (1) milk serum mineral (2) yolk component (3) milk component and (4) modified starch, wherein (2)/(3)=0.01-3 (mass ratio).
