SOLUTION: The low fat roux having an improved cooked taste contains fat, the starchy raw material except wheat flour, onion powder, garlic powder, and soybean powder, contains 5-25 wt.% fat, 10-45 wt.% starchy raw material except wheat flour, and contains no wheat flour or contains wheat flour in a content of 10 wt.% or less. The method for producing the low fat roux is also provided.
