The present invention relates to: a method for producing an Oenanthe stolonifera fermented solution with enhanced alcohol decomposition ability; an Oenanthe stolonifera fermented solution produced thereby; and processed food including the same fermented solution. The method includes the steps of: (a) treating the washed Oenanthe stolonifera with citric acid by soaking and agitating the washed Oenanthe stolonifera in a citric acid solution; (b) producing a mixture by mixing the Oenanthe stolonifera with, treated with citric acid in step (c), with sugar and oligosaccharide; and (c) fermenting the mixture, produced in step (b), by adding lactic acid bacteria in the mixture.
