CURDLAN-CONTAINING COMPOSITION, PRODUCT INCLUDING CURDLAN-CONTAINING COMPOSITION, AND METHOD OF PRODUCING PRODUCT INCLUDING CURDLAN-CONTAINING COMPOSITION
To provide a curdlan-containing composition which hardly causes aggregates when dispersed or dissolved in water and from which a curdlan dispersed or dissolved liquid can be easily prepared, a product such as food containing the curdlan-containing composition, and a method of producing the product such as food containing the curdlan-containing composition.SOLUTION: A curdlan-containing composition of this invention contains curdlan and alkaline salt thereof, in which the curdlan and the alkaline salt are granulated； the granulated particles have a volume average particle diameter in a 90-1000 μm range； a ratio of the granulated particles having a volume average particle diameter of 50 μm or less is 10% or less of the total particles； the alkaline salt content weight is 10 or more when the curdlan content weight is assumed to be 100； and a pH value of a dispersed or dissolved liquid obtained by dispersing or dissolving the curdlan composition in water falls in a 10-13 range.SELECTED DRAWING: None【課題】水に分散または溶解させた際に凝集物を生じにくく、かつカードラン分散液または溶解液を容易に調製することができるカードラン含有組成物、そのカードラン含有組成物を含む食品等の製品、およびそのカードラン含有組成物を含む食品等の製品の製造方法を提供する。【解決手段】カードランおよびアルカリ塩を含有し、前記カードランおよび前記アルカリ塩が顆粒化されており、顆粒化された粒子の体積平均粒径は、９０～１０００μｍの範囲であり、前記顆粒化された粒子において、体積平均粒径が５０μｍ以下の粒子の割合が粒子全体に対して１０％以下であり、カードランの含有重量を１００とした場合、アルカリ塩の含有重量は、１０以上であり、カードラン含有組成物を水に分散または溶解して得られる分散液または水溶液のｐＨが、１０～１３の範囲である、カードラン含有組成物である。【選択図】なし
