The present invention provides an oils and fats crystallization promoting agent, which promotes the crystallization of oils and fats in short time during manufacturing process, said oils and fats is magarine, shortening, chocolates and hard butter used for manufacturing cookies or breads.The present invention is accomplished by revealing that, the sorbitan fatty acid ester having an esterification percentage of 28 to 60% and a content of sorbitol type of 20 to 40% can promote the crystallization oils and fats in short time.本發明提供一種結晶化促進劑,其目的係對在糕點製造、麵包製造中所使用之人造奶油、起酥油,或巧克力類及硬奶油製品於製造工程中,促進其油脂於短時間內結晶化。本發明發現,酯化率為28至60%、且其中山梨糖醇型之含量為20至40%之山梨糖醇酐脂肪酸酯對促進油脂在短時間內之結晶化現象具有顯著之效果,因此完成本發明。無元件符號
