PROBLEM TO BE SOLVED: To provide an oil-and-fat composition comprising oil-and-fat, such as butter cream and a plastic oil-and-fat composition, as a continuous phase, that is irrespective of a melting point and SFC of oil-and-fat, less restricted by an application range, having less oily feeling, excellently melting in a mouth, and having good heat-resistant shape retainability.SOLUTION: An oil-and-fat composition comprises oil-and-fat as a continuous phase, wherein the used oil-and-fat consists of hard stock and low-melting-point oil-and-fat, and a part or all of the low-melting-point oil-and-fat is interesterified oil-and-fat that fills all the following (1)-(3). (1) It is interesterified oil-and-fat obtained by transesterification between a liquid oil and extremely hardened oil. (2) The SFC (solid fat content) is 5-25% at 0°C, 1-5% at 20°C, and 0-2% at 40°C.
