PURPOSE: A producing method of instant noodles is provided to enable users to eat the noodles without a separate cooking process using steamed grain dough. CONSTITUTION: A producing method of instant noodles comprises the following steps: steaming grain powder, and punching the steamed grain powder； thinly pressurizing the obtained material into milled dough； coating the dough with edible oil for preventing the degeneration and maintaining the molded shape； molding the noodles using a noodle processing apparatus with the dough； rapidly freezing the noodles at -20~-30deg C； and cutting the noodles into the fixed length and mass.본 발명은 즉석식 국수의 제조방법에 관한 것으로, 더욱 상세하게는 증숙하여 익힌 곡물의 반죽을 곡물의 국수로 제조하여 식용으로 이용하는 것을 목적으로 하는 제조방법에 관한 것이다.이를 위하여 본 발명은 곡물의 분말을 증숙하여 익혀서 찰지게 떡메질 하는 일반적인 과정 후, 반죽을 압연 성형하는 단계, 압연 성형된 반죽에 식용오일로 박막의 코팅을 하는 단계, 식용오일로 코팅된 압연성형 반죽을 국수로 제조하는 단계 후, 급속 냉동시키는 단계, 커팅장치로 커팅하여 필요 수량에 따라 완제품으로 포장이 되는 단계로 이루어진 것에 특징이 있다.
