PROBLEM TO BE SOLVED: To provide a coagulant for soybean curd, which shows excellent dispersibility when added to low-temperature soybean milk, components of which do not precipitate easily on the bottom of a container, and which does not discharge an inorganic salt, a component that shows coagulation action in the low-temperature soybean milk, can maintain a liquid state of the soybean milk stably for a certain period of time, and enables stable production of high quality packed soybean curd having a smooth texture.SOLUTION: Provided is a coagulant for packed soybean curd, the coagulant being prepared by emulsifying and dispersing an aqueous phase containing a coagulation action component comprising an inorganic salt in an oil phase. The coagulant for packed soybean curd contains a polyglycerol condensed ricinoleic acid ester and a glycerin-succinic acid-aliphatic acid ester.
