PROBLEM TO BE SOLVED: To provide wide noodles in which the sticking of the respective surfaces is hard to occur upon boiling while having wide faces, a noodle-making device capable of producing the noodle lines of the wide noodles, and a cutting blade roll.SOLUTION: Each wide noodle 10 is characterized in that width is 3 to 50 mm, a ratio to the thickness is 3 to 15, and each wide face is provided with a plurality of concaves 14 and 15 in the longitudinal direction. Since the wide noodle 10 has a wideness of 3 to 15 times the thickness, and further, the wide face is provided with the plurality of concaves 14 and 15 in the longitudinal direction, its surface area is high compared with the volume of the noodle and boiling time can be reduced, and further, upon eating, soup is easy to be fitted thereto. Then, owing to the plurality of concaves 14 and 15 in the longitudinal direction, even if the noodle lines are overlapped, the contact parts are only projecting parts, and contact in a wide area hardly occurs. Further, even if they are contacted, hot water infiltrates from the parts of the concaves 14 and 15, thus the sticking of the respective surfaces is hard to occur upon boiling.SELECTED DRAWING: Figure 2COPYRIGHT: (C)2016,JPO&INPIT【課題】幅の広い面を持ちながら、茹でる際に表面同士の付着が生じ難い幅広麺、及びそのような幅広麺の麺線を製造することができる製麺装置、切り刃ロールを提供すること。【解決手段】幅が3~50 mm、その厚みに対する比が3~15であり、幅広面に複数本の長手方向の凹条14及び15を有することを特徴とする幅広麺10。幅広麺10は幅が厚みの3~15倍と幅広であり、しかもその幅広面に複数本の長手方向の凹条14及び15を有するため、麺の体積に比べて表面積が大きく、茹で時間を短縮することができるとともに、食べる時にはスープが乗りやすい。そして、これら複数本の長手方向の凹条14及び15により、麺線同士が重なり合ったとしても、その接触部分は凸部同士のみであり、広い面積で接触することはほとんど無い。しかも、接触したとしても凹条14及び15部分から湯が入り込むため、茹でる際に表面同士の付着が生じ難い。【選択図】図2
