This invention provides a vacuum cooling device capable of cooling a foodstuff to a target temperature.The vacuum cooling device 1 contains: a first cooling control unit 501 which reduces the internal pressure of a cooling tank 2 to a first target pressure value by pressure reducing means 3 and maintains the internal pressure of the cooling tank 2 at the fist target pressure value for a first time period after the internal pressure has reached the first target pressure value; a foodstuff temperature judging unit 502 which determines, after the cooling by the first cooling control unit 501, whether the detection temperature of a foodstuff temperature sensor 21 has reached the target temperature; and a second cooling control unit 503 which contains a second cooling hold control unit 5033 which newly sets the temperature when the temperature determined by the foodstuff temperature judgement unit 502 has not reached the target temperature, by reducing the first temperature from the set temperature, reducing the pressure by the pressure reducing means 3 to a set pressure value, and maintains the internal pressure of the cooling tank 2 at a set pressure value for a second time period when the internal pressure of cooling tank 2 has reduced to the set pressure value.本發明提供使食材溫度到達目標溫度之真空冷卻裝置。該真空冷卻裝置1係具備:第一冷卻控制部501,藉由減壓手段3將冷卻槽2的內部壓力減壓至第一目標壓力值,在到達第一目標壓力值之後,將冷卻槽2的內部壓力維持於第一目標壓力值持續第一時間;物品溫度判定部502,在藉由第一冷卻控制部501冷卻之後,判斷物品溫度感測器21的檢測溫度是否到達目標溫度;以及第二冷卻控制部503,在物品溫度判定部502判定為未到達目標溫度的情況時,重新設定從目標溫度減去第一溫度後之溫度,並藉由減壓手段3減壓至重新設定的設定壓力值,並具有第二冷卻保持控制部5033,在冷卻槽2的內部壓力到達設定壓力值之後,將冷卻槽2的內部的壓力維持於設定壓力值持續第二時間。
